Sometimes we just need a little bit of sweets. For some reason we most often crave sweets in the morning thus leading to donut binges.
This recipe, while vegan, isn’t exactly healthy but it is still better than a plate full of donuts.
1 cup whole wheat flour
1 tablespoon baking soda
2 tablespoons pure maple syrup
1 tablespoon raw sugar
1 cup non-dairy milk
1/4 cup macadamia nuts
1/4 cup vegan chocolate chips
Mix flour, sugar and baking soda together then add in maple syrup and non-dairy milk and stir until thoroughly mixed.
Then fold in nuts and chocolate chips.
Heat a skillet on medium heat, spray with cooking spray if needed, then place approximately 1/4 cup of pancake mixture on skillet and cook for about four minutes on each side.
Repeat until all pancakes are done. Sprinkle with powdered sugar and enjoy.
Makes 10 to 12 pancakes.
