I adapted this recipe from Alicia Silverstone’s Kind Diet.
Mondays are very long days for us, so there is nothing better than coming home to soup or stew ready to eat. I have a small two person crockpot and it is certainly earning it’s keep.
Crockpot Sweet Potato Lentil Stew
2 small sweet potatoes, cubed
1/2 a large onion, diced
1 large tomato, diced
3/4 cup brown lentils
3 cups of vegetable broth
1 teaspoon cinnamon
1/2 teaspoon chili powder
1/2 teaspoon nutmeg
Dash of sea salt
Place all ingredients into a crockpot and cook on low for six hours.
This soup is very simple, easy to make. It is hearty, but also sweet.
