Dressing up Quinoa

I am one of the few who really likes plain quinoa. I know it is rather bland but is a great side dish. I came up with this recipe tonight to dress up quinoa.

1 cup dry quinoa
1 1/2 cups water
1/2 cup non-dairy milk
2 teaspoons rosemary
Pinch of sea salt
1/4 cup nutritional yeast
4 cups baby arugula

Add quinoa, water, milk, rosemary and sea salt into a pan and cook until liquid is absorbed. Remove from heat and add nutritional yeast and arugula. Stir until arugula is just wilted. Serve immediately.
