Vegan Hearty Hash


Ever need a dinner that really fills you up? This dinner is extremely hearty and full of vegetables. What more can you ask for?


2 Russett potatoes, cubed
1/2 yellow onion, diced
1 red bell pepper, diced
1 cup frozen organic green peas
2 cups cannellini beans
1/2 tablespoon rosemary
1/4 cup nutritional yeast
2 tablespoons olive oil
Dash of sea salt

Heat olive oil in a large pan. Add potatoes and onion, cook for about 5 minutes, stirring often. Then add peas, beans and pepper. Cook another 3 to 5 minutes. Add rosemary (you can use whatever spice you want, I love rosemary and use it in everything I can), nutritional yeast and salt. Cook until evenly coated and all vegetables are cooked thoroughly. Serve immediately.
Serves 4
