Vegan Maple Cinnamon Pancakes


These pancakes are J’s very favorite, he begs for them every Saturday. After he eats them he says the same thing. “Oh yes, the way to a man’s heart is through his stomach”.
These pancakes are very filling and help keep us fueled all morning long so we can get farm/yard work done.

Vegan Maple Cinnamon Pancakes
1.5 cups whole wheat flour
1.5 T baking powder
2 t cinnamon
1 t fine salt
4 T pure maple syrup
1.5 cups non dairy milk

Mix all ingredients together. Place 1/4 cup of batter onto warm skillet. Cook on medium-low for approximately 3 minutes, flip and cook another 3 minutes. Top with earth balance butter and pure maple syrup or my favorite sprinkle with raw sugar and cinnamon. Makes 8 – 10 pancakes.
