Saint Paddy’s Day Dinner


In honor of Saint Paddy’s Day I decided to go with an Irish specialty, Colcannon.
This Colcannon has potatoes, Kale, spicy vegan sausage, earth balance butter, nutritional yeast and spices. Amazing!!

Vegan Colcannon
4 cups potatoes sliced and cooked until fork tender
4 cups Kale
4 links vegan sausage
3 T Earth balance butter
1 t salt
1 t soy sause
1 teaspoon garlic powder
Non dairy milk, as needed
Nutritional yeast to taste

Cook potatoes. In a separate pan add butter, soy sause, salt, garlic powder, Kale and sausage. Cook until Kale is wilted and sausage is warm. Drain potatoes, add to Kale and sausage and mash. Add non dairy milk as need to make dish creamy and nutritional yeast to taste. I love nutritional yeast so I used about 1/4 cup.
Serve immediately.
